I know Mr. Riaz Khan thinks I have gone out of my mind whenever I bring home cans of halal lunch meat and halal corned beef from the store. Mr. Riaz Khan is my husband I always talk about and it is only fair to my readers to let them know who this gentleman is to me.
There are times when the summer comes and I don’t want to spend much time in the kitchen cooking because living here in Chicago the weather can be of the extremes. Cold one second and hot the other and at times it is sunny and rainy both. It is enough to make everyone miserable.
This macaroni salad just like my tuna mac, carrot salad, coleslaw and potato salad are great for consumption when it gets hot with very little heat generated in to your kitchen.
I take a gallon or 4 liters of water and let it come to a rapid boil. It helps a great deal if you have a lid over the pot, just continue to check it every now and then to see if it is coming to boil and when it does open the bag of macaroni and cook it to package directions. Also you can heat up the water in the instant pot and the like by selecting pressure cook function on high for 10 minutes, press the quick release button then adding a box or or bag of macaroni. Again place the lid on the instant pot and the like. Select pressure cook on high for 20 minutes once more.
Drain the macaroni in the colander and run cold water to rinse the macaroni and put it in a large bowl and set it aside.
I opened 1 can of halal lunch meat and cut it in to tiny pieces and mix it in with the macaroni. I added either 1 onion, it doesn’t matter which color, or I would add 4 green onions chopped and added it to the macaroni and stirred. I would also add 1 pinch of black peppercorns ground in mortar and pestle. At this point I don’t use salt because the lunch meat is pretty salty by itself.
I would add either 1 jalapeno or one serrano chili that has been chopped (optional). I would also add 1 pinch of chives, or parsley ,or dill weed (optional). This is going on how I am feeling and I would also add 5 tbs of mayonnaise and 1 /4 tsp of mustard in there too and give it a very good mix.
The halal lunch meat you can get at any store selling halal meat and it is Zayed brand so you know what you are looking for.
