Kalool means beans in Hindko which is sort of a dialect of Punjabi that I have been told and rajma is an Urdu word meaning red beans or kidney beans.
This is a very simple straightforward and easy recipe from Peshawar Pakistan. My family makes this a lot when there are celebrations like birthday parties etc.
What you need to do first is wash and soak 1 handful of kidney beans overnight and add to the pressure cooker with 1 liter or 1 quart of water the next day and turn the stove on and watch the safety button to pop up and set timer for 20 minutes.
When time is up turn off the stove and let the pressure escape undisturbed. You can tell when safety button is down and the pressure is gone. At this point you will have a nice soft bean and pour the beans in a bowl with the liquid from the beans and let it cool completely. Don’t throw the bean juice.
After the kalool or rajma which means beans in Hindko and Urdu with an English translation, cools take 1/2 cup of yogurt and whip it until it is smooth and add to the beans and mix very well. Add 1 pinch both of red chili powder and chat masala then stir and combine. Add 1 tomato, 1 green chili of any kind and 1 onion of any color or 3 green onions. Add 1 pinch of pink salt and 1 pinch of cilantro, give a final mix and serve with kababs.
