I took this picture before I ate it because the fish is so light it doesn’t fill you up at all and there was this yummy sauce to go with it and bam I was craving gari. I love gari with fish very much and to me it pairs very nicely so I recommend gari with this dish.
It can be white or yellow gari and I like them both. I put 1/2 cup of gari in a microwave safe bowl and added 1 cup of cold water and I was stirring until I had combined and put it in the microwave for 2 minutes. I checked it again and I stirred and made sure I got it in to a neat ball and put it back in the microwave for another 2 minutes.
This time it was ready to eat I poured some of the sauce plus took a couple pieces of the fish and I had to be careful that gari is very hot and I don’t want to burn my fingers.
I was so hungry at this point that I was tearing off tiny pieces of my gari because it was steaming hot. Also this dish is only for white or yellow gari.
The idea from making any swallow in a microwave came from Matsee of Matsee cooks.
I watched her video on youtube on the Chefrican program. On there she mixes the gari with a ripe plantain to make a different type of swallow. Making gari and pounded yam and other types of fufu is easier for me to do from a microwave then a stove top.
On stove top it sticks and I don’t have this problem with microwave.
