This is my special sauce I made up in a hurry that goes with the butterfish. There was still some seasoning in the oil that was an absolute shame to waste it so I made a sauce in a spur of the moment. The seasoning was there and I didn’t have to add anything else except two mini sweet peppers or one large bell pepper. The color really doesn’t matter and I cooked it until it got soft then added 1 tbs of tomato paste in some water and mixed it and added it to the skillet and let that cook until it got a little thick then turned off the burner and it is done and ready to be consumed with fish and gari.
