This one is similarly made like baba ghanouj except it is with a bean and not an eggplant. It is just as delicious though and this can be eaten at anytime during the day and great for breaking fast during Iftar during Ramadan. It is a very short ways away and I am really looking forward to it.
I start with washing and soaking 1 cup of chickpeas overnight in a bowl filled with water. Just making sure there is enough water covering the beans. The beans will plump up and swell. I rinse one final time and add them to the pressure cooker with 1/2 gallon or 2 liters of water for 30 minutes after the safety button pops up. The burner is on medium high.
I turn off the burner and wait for the pressure to release and open the pressure cooker to check the beans and the water content. If the water content is a little low and the beans are not completely soft I add 1 liter or 1 quart more water and on medium high heat I wait for the safety button to pop up and cook for another 20 minutes. I turn the burner off and once more let the pressure escape, open the pressure cooker after the safety button dropped and strain the beans reserving the liquid.
The cooked beans I add to my food processor with 3 cloves of garlic, 3 tbs of lemon juice, 4 tbs of tahini, 1 dash of balsamic vinegar, 1 pinch each of red chili powder, thyme, sumac, pink salt and 1/4 cup of olive oil. If you are using cinnamon powder add a pinch and if not add 1 small piece of cinnamon broken off of a stick ground in a mortar and pestle. If you are using ready made cinnamon powder then you do not have to break off of a piece from a cinnamon stick to grind and vice versa.
In mortar and pestle add 2 cloves, 1 pinch each of black pepper corns, allspice, cumin seeds and coriander seeds. Grind them in to a coarse powder and add it to the chickpea mix in the food processor.
First pulse to combine everything then open up the food processor and use a rubber spatcula or a spoon to stirr the bean mixture. If it seems dry at this point add 1/4 cup of the bean juice reserve, close the food processor and then pulse to mix then first, second and then 3rd speed to mix until it becomes a paste.
Serve with pita bread. This is great for Iftar during Ramadan.
