I swear I really do love plantains. It is both in African and in Puerto Rican cuisines. So I am going to do another post with plantains.
The dodo as it is known in Nigeria and other West African countries is used by using ripe plantains. I used 2 ripe plantains that I have peeled and sliced crossways. As you see in the picture that the slices are round and this is how it should look.
I added 1/4 cup of corn oil in the wok and fried in batches of 8 at a time until there is no more. After frying until they are brown I took them out and set it on paper towel.
Now for the tostones is made by using green or unripe plantain also known as plantanos in Spanish. With the green plantain after it is peeled and sliced. It is fried in oil in batches of 8 until they are all fried up then smashed while hot and fried again along with 2 cloves of garlic crushed and a pinch of pink salt added.
Tatales are made with overripe plantain by peeling and mashing the overripe plantain then forming them in to patties and frying them in hot oil. Repeat until they are all finished. This is from Ghana.
