I wanted to try this recipe out because I have gotten a bag of surti papdi which is a type of Indian bean. I have saved and pinned several recipes on how to make these and I came up with my own recipe from there. It came out really delicious and these come in a bag that is already frozen.
In a pressure cooker add 1/4 cup of olive oil. Turn the burner on high and add 1 pinch each of hing, mustard seeds and cumin seeds. Add 1 onion or shallot cut in to half moon slices and stir and add 2 pinches of pink salt.
In a mortar and pestle break off one small piece of amchur and add it then add 1 pinch each of coriander seeds and black pepper corns. Stir until the onions or shallot turns brown. Add 1 green chili with the seeds removed and 3 cloves of garlic and a small piece of ginger washed peeled and finely cut.
Stirr and add 1 pinch each of desiccated coconut, the contents in the mortar and pestle, 1 pinch each of red chili, ajwan, turmeric and Garam Masala. Stir and add 1 tomato and cook it until it is mushy. Add 1 potato that has been chopped. I left the skin on and this is ok too and any color of potato will do. I also kept the skin on and also they must be washed before you cut them. Add the bag of surti papdi (a type of Indian bean) which are frozen and they can be found at many Indian grocery stores. Add 1/2 cup of water to the presure cooker stir and cover.
Let the pressure build and when the safety button pops up turn on the timer for 10 minutes. Turn the heat down to medium. When 10 minutes is up turn off the heat completly and let the pressure escape. When the safety button is down it means it is now safe to open the pressure cooker. You can now open it safely and enjoy the contents inside.
