Here is a new recipe that is fusion and at the same time has Latin American flavors. So without further ado, here is my new recipe for these catagories.
If you are using dried lima beans out in a bowl to wash and soak with a bowl full of water for 3 hours. If you are using frozen lima beans, just skip this step. I used 1 bag of frozen lima beans. Turn on the pressure cooker on medium high heat.
In a pressure cooker add 1/4 cup of olive oil, 1 onion or shallot cut in to half moon slices and fried until brown, 3 dashes of liquid smoke, 4 shakes of adobo seasoning, 1 pinch each of black pepper corns and cumin seeds ground in to a powder and added to the pressure cooker, 1 chopped chili of choice, 3 chopped cloves of garlic, cook until the rawness goes away, 1 tbs of tomato paste, 4 cups of water then pressure cook for 15 minutes after the safety button pops up.
When time is up I turned off the stove and let the pressure escape. I ate this over a bowl plain rice.
