This dish is wonderful because you have the sweetness of the peas and it pairs nicely with the spices that is in this dish. Also the potatoes makes it more filling and satisfying. I find this pleasing on the palate. Now on to the recipe.
I turned on the heat to high and added 1/4 cup of olive oil to my pot. I added 1 pinch of hing then I added either 1 onion or 1 shallot and caramelized them. I added 1 pinch each of coriander seeds, cumin seeds and black pepper corns then ground them in my mortar and pestle. I added the contents to the pot, 1 pinch each of turmeric, red chili powder, Garam Masala, 1 green chili and pink salt. I stirred and added 1 bay leaf. I peeled and chopped 1 small piece of ginger and 2 cloves of garlic then I crushed them in my mortar and pestle.
I added this to the pot, stirred and added 1 tomato I had chopped then cooked it down until it was a mush. I washed very well 3 potatoes and yet kept the skin on them becasuse I wanted it this way so they can retain the important nutrients. You can peel them if you wish. I added 2 cups of frozen peas, 3 cups of water and turned the heat down to low. I cooked the aloo matar (peas with potatoes) for 20 minutes. If they are still a little hard then cook it for another 20 minutes or until done.
P.S. Sauté function on instant pot and the like on high olive oil,onion or shallot. garlic, ginger, green chili, tomato, hing, masala, let tomato get mushy. Add water, select cancel, add pink salt, potatoes, peas place pressure cook lid on instant pot and the like, select pressure cook on high, let cook 20 minutes.
Enjoy with naan or chapati.
