I have another yummy dish for you to try and really it is one of my favorites. This is also a very simple and easy dish. A wide aray of vegtables and protein choices can be used in case if someone is a picky eater. So let me show you what I did. Also any type of vermicelli noodles can be used too.
First bring to boil 1 gallon or 4 liters of water, add 1 pinch of salt and 1 tsp of sesame oil and finally add 1 package of vermicelli according to package directions. I used brown rice vermicelli. This is perfect for those that are sensitive to wheat.
In a wok on high heat I added 1 oz of sesame oil, my veggie of choice was 1/2 bag of brussels sprouts. You can add any frozen or fresh vegetable of choice. Stirfry then add 8 cloves of garlic, 1 bunch of green onions, 1 small piece of ginger peeled and chopped. I added 2 Thai chilies which are 1 of each that are red and green chopped.
Stir fry all of these and set them aside only if you want to add protein of choice. This can be 1 lb or 1 kilo octopus, squid, shrimp, fish, beef lamb, goat, chicken or veal or you can add 1 can of tuna or sardines at the end of cooking time. If using beef, lamb, goat, chicken or veal, cook these until they are tender. This would requite 1 hour of cooking time on low flame in the wok. If seafood is used, clean if they need cleaning then cook for 3 to 5 minutes.
As mentioned as above if you only want the vegetables only, continue to the next step. If you want the protein options, go ahead and add the veggies back to the wok and stir fry.
I added 3 tbs each of rice vinegar and panzu sauce, 1 tsp of shrimp pase or fish sauce and stirred. I drained my vermecelli, rinced with cold water and put it back in the pot.
I added 1 can of tuna which was my protein of choice and the bressle sprouts which is my veg of choice. There is 1 optional ingredient and that is eggs for those that want to add to this pot I had 1 can of quail eggs which I opened, drained and rinsed to get all of the brine off. This is what I had on hand and I used it. If you want to use fresh quail eggs the yield is 6 quail eggs or 2 chicken eggs boiled for 10 minutes. Set aside to cool then crack and peel them.
After I placed this on top of the noodles, in a clean dry wok I added 3 pinches each of black and white sesame seeds and roasted them until they sputtered and added them to the noodles. I mixed and I enjoyed. Also if you want to only with chicken eggs of course, scramble them before you add them to the pot with 1 tsp of sesame oil.
