Queseadilla A Mexican Stuffed Paratha

This is a very good snack or even an appitizer if you ask me. This is something that you want to enjoy even with an alcohol free malt like the one I really enjoy is Goya malta light. Also it is great with coffee too. You can even have it for tea in some cases too.

If you are going to use shredded beef or chicken, season and cook the meat until it is tender then shred by using 2 forks and use a pulling motion to pull it apart. Season it with 3 shakes of adobo, red chili powder, 2 pinches of meat tenderizer for the beef only if using and 2 cloves of garlic crushed. You add these just as you are cooking then shred afterwords. Fry 1 lb or kg of either chicken breast pieces or pieces of beef for 30 to 45 minutes on low or until done in either a cast iron skillet or wok.

For beans refer to this recipe then proceed. Any canned fish that flakes works too. Look here and here for making the flat bread used for making this. This is how I made this. I even recomend the fish in tomato sauce, small shrimp and 1 can of crabmeat would work too just as well.

You can also make your own flour tortillias or buy some from the store. Just make sure that no lard is used. Take 2 pieces of chapati or tortillia, make the tawa (griddle) hot, take 1 tortillia or chapati and add your filling of choice. Use enough to spread out to near the edge then add some grated Mexican cheese which is the melting one used for which we are making.

Add 1 tbs of olive oil to the hot tawa (griddle) place the other piece of chapati or tortillia on top and gently add it to the hot tawa (griddle) and cook until it is golden and the cheese is a gooey mess. Oops I forgot to add this is also perfect game food too like if you are watching the Super Bowl, The World Series, The World Cup Cricket match or Soccer. It is even just right for any sports event where you want to grab some buddies and and sit back and watch tv.
