MMMMMMMM!!!!!!!!! This dish is so very yummy!!!!!!! My tastebuds are singing and my belly is happy. I really love love crab meat and other types of seafood. If you are from Maryland just say yo. I am not from Maryland or ther places in the south but I can’t get enough of crab and I am from Chicago. This is a quick and easy recipe and all you need is a hot cast iron skillet with 1/4 cup of corn or canola oil on medium heat.
Cast irons gives off heat very nicely and cooks food evenly. I opened 1 can of crab meat and didn’t drain it. I added this plus the liquid from it in to a small mixing bowl. I added the old bay seasoning I had made. The link from the previous post is on the left.
I also added 1 pinch each of black peppercorns, mustard seeds then ground them in a coarse powder in a mortar and pestle and added it to the crab mixture. However if you do not want to add 1 pinch of mustard powder instead of the mustard seeds this is ok too.
I added 1 pinch of parsley, pink salt, red pepper flakes or 1 drop of hot pepper sauce. If you don’t have red chili flakes crumble 1 small whole red chili instead.
I put two slices of whole wheat bread in a toaster then broke them up and placed it in a mini food processor to make bread crums then added this to the crab mixture. I added 1 handful of rice flour for binding along with 1 egg.
I added 3 dashes of maggi or knorr aroma, 1 tsp of lemon juice, 2 dashes of Worchestershire sauce and mixed it until it formed a soft dough.
I wet my hands and scooped by the teaspoonfuls and formed little patties and placed it in the hot oil. I fried them in batches of 3 until they are golden brown and drained them on plate lined with paper towel. I repeated until there is no more of the crab meat mixture left.
The serving suggestion is with fried green tomatoes and potato salad. This is how we ate them last night and also a nice bottle of ice cold non alcholic brew would be nice too.
