Oh my God this is the best ever and it is very tasty. No, on the contrary this is not a Mexican salsa. In Ethiopia and other eastern African countries also in Barundi and Rawanda this is known as kachambari. In India and Pakistan it is known as kachambar and Afghanistan it is called salata.
This is great on injera which is an Ethiopan sourdough crepe and it goes well with one of the main courses. It is perfect to eat in hot weather too because this is very refreshing.
The ingredients are I chopped 1 green chili deseeded, 1 onion, I cucumber, 1 tomato, only 1 avocado is optional. I added these to the mini food processor I have. It came with my immersion blender. I bought this on Black Friday. I did not feel like dragging out my bigger food processor but I would if I was making a larger quanity. These get finally minced and then added to a bowl and the last remaining ingredients plus an optional or two if desired is added.
The final ingredients are, 1 tsp each of either lemon or lime juice and balsamic vinegar, 1 pinch of pink salt and stir. You can serve it this way or add the optional which are, 1 pinch of mint, cilantro, parsley or dill weed. Stir again and serve.
