I am going to put my spin on green masala. I wanted to try a green masala recipe because I heard that red masala is not good for your health at all. A part of it starts in the blender and the other half is in the mortar and pestle and gets combined at the end.
In a blender add 1 big green tomato or 4 tomatillios. Tomatillios are mostly used in Mexican cooking but this is a great substitute for the large green tomato if you can’t find it. They are sold in Mexican grocery stores or other stores carrying a wide array of ethnic produce.
Add 1 onion or shallot along with tomato or tomatillios in to a blender, 1 green chili of any type deseeded, 3 pinches of cilantro, 1 tsp of lemon or lime juice, 1/4 cup of water for ease of processing, 2 cloves of garlic, 1 small piece of ginger washed and peeled, 1 pinch of black salt and blend.
In a mortar and pestle add 1 clove, 1 pinch each of cumin seeds, coriander seeds, black peppercorns, 1 small broken piece of cinnamon stick or 1 pinch of cinnamon powder. Grind and add to the blended green tomato mixture and blend again to finish making the green masala.
This is for any dish you want to use this green masala for such as, biryani, pulau, various curries like fish, chicken, veal, lamb, goat, beef, turkey and also keema.
