This is another one of my favorite vegetables. Like I said before I really love squash and it doesn’t matter which typte it is.
Preheat the oven to 400F or 200C degrees. Spray small roasting pan with cooking spray. Cut 1 acorn squash in half and remove the seeds. You can increase the yeild if you want, depending on the people you have to feed. After the seeds are removed, place them in a roasting pan that has been sprayed with cooking spray. Add 1 tiny piece of a cinnamon stick ground in a mortar and pestle or 1 pinch of cinnamon powder, great some nutmeg, 1 tbs of turbinado sugar and two pats of butter devided.
Make sure that it goes inside the cavity of the acorn squashes themselves. They should be cut in halves only. Bake covered for 30 minutes. Check and see if the are soft. If they are a little hard then cook for another 30 minutes.
Enjoy this with steak, baked chicken or roast turkey. P.S. You can also do this in an instant pot duo crisp and the like multi functional cookers at the same temp and amount of time as a regular oven. First you add 3 cups of water to the inner lining and place the trivet and the disk and put the acorn squash in a baking pan for pot in pot cooking.
