I made salmon croquettes for years and never got around to posting it until now. These are a yummy and tasty treat that you can eat at any time of day.
I added 1/4 cup of corn oil in to a large cast iron skillet. I turned the heat on to low heat til got hot. While the oil is heating up, I added 1/4 cup of all purpose unbleached flour, 1 cup of cornmeal, either 3 pinches of vegtea seasoning or 3 dashes of seasoned salt, 1 pinch of baking powder, 3 dashes of lemon pepper, 1 pinch of black peppercorns ground in mortar and pestle and added to the cornmeal mixture, for the dry ingredients.
I added 1 egg. 1 drop of liquid smoke, 1 onion or shallot chopped 1 clove of garlic chopped 1 can of salmon undrained, 1 1/2 cups of water for the wet ingredients. Do not throw the brine away because the flavor is there and then add the little bit of water mixed in to a batter.
By using the teaspoon take some of the batter by the spoonfuls and add in batches of 3 or 4 and fry until it turns brown on one side. Turn and cook on the other until it is brown and cooked through. Take the cooked salmon croquettes and drain on a plate or bowl lined with paper towel. Repeat until there is no more batter left.
You can serve this with noodles or rice and a side of vegetables. Enjoy.
