I seen 1 package of chicken breast in the freezer the other night. I told Mr. Riaz I am going to make some kababs with this zip baggie of chicken breast. He said ok and let the rest be a surprise just to keep him guessing on purpose. At least he got his way and this is totally my own personal recipe just like my caper sauce that I had made to go with this particular dish.
Besides 1 lb or 1 kilo of chicken breast only, you can also use pieces of beef, lamb, goat or veal too. Also it works well for mince too. You can use 1 lb or 1 kg of turkey, lamb, goat, chicken, veal or beef. If using mince add 1 handful of rice flour for binding agent.
In a bowl combine 1 pinch each of cilantro, dill weed, basil, mint, parsley, basil, oregano, thyme, sage, tarragon, marjoram, rosemary, oregano, 1 pinch each of pink salt, lemon pepper, 1 clove of garlic crushed, 1 tsp of olive oil, 1 drop of pepper sauce. Mix and combine and add either your pieces of meat or mince of choice in the bowl, cover with a plastic wrap and let it sit in the fridge for 30 minutes.
Preheat oven to 375F or 190C. Take 1 sheet of aluminum foil and place it on a cookie sheet then spray it with cooking spray. Take the metal skewers and thread the pieces of meat or take the mince by making a meatball and making it form around each skewer. Repeat until it is all used up.
Bake for 10 minutes then turn and cook for another 5 minutes. Serve with the caper sauce and pita bread.
