This is an oh oh post again. It is because sending my husband to the store was a total oh oh. It was something I had to make lemonade from lemons again. Also the guy who filled the order was the one that made an oopsie. I send Mr. Riaz to the store and the guy who filled the order gave him kidney and liver mixed. When I opened the bag I got madder then a humdinger. I acctually wanted just kidneys and I ended up with liver and kidney mixed. Ladies never send a man to the store becuse they do not think.
I sent him for whole kidneys and in the bag they was cut already because I cut and clean my own kidneys which is no biggie. You have to cut around the kidney to make sure that you do not get any part of the cortex of fatty part that is in the middle. Also you have to remove the outer membrane of the liver which comes straight off. This is because the guy decided on himself to give my husband a bag of kidney’s and liver mixed is the reason for my post.
Place the 1 lb or 1 kg of livers and kidneys in a bowl that has been cut and add 2 pinches of kosher salt and cold water. Place this in the fridge and let them soak. In the mean time you can go catch up on shuteye or do other types of business you have to do. Take the bowl out and grab a sieve and dump the kidney liver in there and let all of the bloody water drain out. Add 1 tbs of white vinegar and again rinse 5 more times and straining the water out, The water from this should be clear at this point and no longer bloody.
Add 1/4 cup of oil of corn, canola, olive, peanut, coconut, sunflower or safflower to a cast iron skillet or wok on high heat then lower it to medium heat. Add the liver and kidney mix and fry. While it is frying add 1 pinch of black peppercorns to a mortar and pestle and grind in to a coarse powder and add it to the liver and kidneys. Add 1 pinch each of either frozen or desiccated coconut, tamarind pulp, tumeric, red chili powder, paprika, curry powder, 1 chili of any type, {this may be deseeded as you like} 3 dashes each of maggi or knorr aroma, either lemon or lime juice, If you re using fresh lemons or limes you may cut in half and squirt the juice directly on to the meat, 1 small piece of ginger, 2 garlic cloves washed peeled and chopped before adding to mortar and pestle to crush then add to meat, either 1 bunch of green onions, 1 onion or shallot chopped then added, stir and add 1 tomato chopped.
Stir again and cover and let cook until the tomato is mushy. Keep checking frequently because it may burn. Anyway I hope you will love this post in spite of my being in a bad mood over a bag of liver and kidneys when I so clearly wanted just kidneys.
