As you see here I tried to take a picture last night of the whole omlet but it didn’t take for some reason. However I managed to capture half heaten omlet before Mr. Riaz finished it. He was very hungry. I was just dead lucky enough to get this picture too. I have to make one for myself yet because This is enough just for one person.
For the filling:
In a cast iron skillet or even a wok on high heat add 1 oz of olive oil. ! onion or shallot cut in to half moon pieces chopped diced or minced, fried until almost brown or according to how you want to cook your onions, 1 green chili, 1 pinch of pink salt, 3 dashes of maggi or knorr aroma, 1 tomato chopped and cooked down til it is a complete mush.
In another skillet if you have more then one but if you only have one do not worry. Just empty the filling part in to a bowl and set aside then clean the skillet for the next step.
The outer part of the omlet:
Crack two eggs in a bowl and beat them vigorously with either a wisk, eggbeater or a fork until you see just a yellow mass and the yolks and the whites are well blended. In another skillet, spray with cooking spray and turn on high heat. Add the blended egg and swirl all around by tilting it in other directions until it is well coated at the bottom. It has to be well coated with egg all over the bottom ofthe skillet. As it dries then place the lid over the skillet and turn down to medium. Leave it for 5 seconds then pick up the lid and place it aside. Turn off heat and place the filling on the lower half of the cooked egg and the part that is away from you fold down and this looks like half of a circle.
Slowly slip it out and add it to a plate and enjoy with a steak or even zabhiha turkey sausage or turkey bacon. Also you have to be gentle with it because you do not want it to break.
