Actually I wanted something basic and tasty without grinding a lot of spices. I aslo want another dish that is versatile. What I mean that this gizzards sauce can not only be eaten with any type of pasta, It can also be eaten with either rice, quinoa, cous cous or fonio as well. Be sure to cook these according to package directions.
In a pressure cooker on high heat add 1/4 cup of olive oil, cut either 1 onion or shallot in to half moon slices or slice one whole leek. make sure that you clean all of the mud that is in the green parts of the leek. They look like a green onion but they are a lot fatter. Also if you prefer then chop 4 green onions.
In mortar and pestle add 1 pinch each of celery seed and black peppercorns then grind them in to a coarse powder and add this to the pressure cooker. Add either 3 pinches of pink salt, vegtea seasoning, seasoned salt or 1 bullion cube, 3 dashes of maggi or knorr aroma. Add 1 chili of any type, if dried crumbled or fresh chopped and deseeded or 1 drop of hot pepper sauce, the mixed hearbs that are 1 pinch each of thyme, oregano, basil, sage, parsley, rosemary, marjoram, 2 bay leaves, 3 cloves of garlic chopped then 1 tomato chopped and cooked until it is mushy.
Add 1 kg or 1 lb of gizzards, 1 liter or 1 qt of water close the cooker and watch the pressure build. When the safety button pops up let cook for 30 minutes. Here you can reduce the heat to medium while it is cooking. After time is up turn the heat off and let pressure escape. This would take at least 10 to 15 minutes. When the safety button is down and pressure is gone then you can safely open the cooker. Turn back on the heat and add 1/2 can of tomato paste. Stir until it is completely desolved and let a good sauce form.
Add to cooked pasta or rice of any type or quinoa, cous cous, grits, polenta or fonio would do very nicely indeed, Serving suggestion is you can grate any type of cheese of choice. I ate mine with parmasean and romano cheese last night. Do not take my word try it and see for yourself. Also you can make this in a multifunctional cooker as well such as an instant pot and the like.
