Actuaaaly really you are going to think these are black eyed peas. They are called purple hull peas and equally as delicious. In the pressure cooker add 1/4 cup of oil of olive, corn, canola, peanut, sunflower or safflower. Let it get hot then add 1 onion or shallot or 4 green onions chopped or cut in to half moon slices.
Grind 1 pinch of black peppercorns and add to fried onions. Add either 1 chili of any kind chopped, 1 pinch of red chili powder or 1 drop of hot pepper sauce. Add 1 pinch of paprika, stir and add 3 dashes of maggi or knorr aroma, add either 1 bullion cube, 1 pinch of vegtea seasoning or 3 dashes of seasoned salt, 4 cloves of garlic chopped, stir and add 4 dashes of liquid smoke only if you are not adding smoked meat or going meatless.
Add either 1 kg or lb of goat, lamb, chicken, beef, smoked turkey or 6 slices of zabiha halal beef or turkey bacon chopped, 1 bag of frozen purple hull peas, 1 qt or 1 liter of water. Stir and close the pressure cooker and cook for 20 minutes afer the safety button pops up. Let the pressure escape and check and see if they are soft. Also if using unsmoked meat and going vegetarian like last night. You only add liquid smoke if you are making it a vegetarian or vegan meal to give it a smokey taste. It can be used on unsmoked meats as well.
It is so enjoyable with either hot water bread or cornbread. P.S. You can adapt this to instant pot and the like too because they are multi functional cookers.
Select sauté for frying onions and the zabiha halal turkey or beef bacon if using add the purple hull peas seasoning and water like you would the stove stovetop version then cancel sauté which turns the instant pot off. Select pressure cook on high for 15 minutes then you are done.
