This is another gem from my kitchen and it was so very yummy along with any type of sandwiches, hotdogs and burgers. Mr. Riaz enjoyed this way too much also as well as I did. I have made fried sweet potatoes before in the past and Mr. Riaz said sweet potato fries??? He thinks it is something I use to make the pies with on holidays like Thanksgiving and Christmas.
You will need 2 or more sweet potatoes. Peel and wash them very well and cut them in half lengthwise. After this then again lengthwise cut in to half moon slices and cut those in to two or three pieces lenghwise again.
Take 1/4 cup of cooking oil of choice that can stand up to high temps while frying. This is oils of avocado, grapeseed, peanut, corn, canola, sunflower or safflower. Fry on high heat only in 1 handful batches of these yummy fries for 10 to 15 minutes with the lid covered. This makes the fries cook faster and it makes it more done on the inside. Make sure too that It is golden brown before removing and placing on a plate lined with paper towels.
This helps absorb the exess oil from the fries. Grind in the mortar and pestle I small broken piece of cinnamon in to a powder, grate a little nutmeg on to the fries itself, sprinkle the cinnamon powder that has been freshly ground in the mortar and pestle along with 1 pinch each of pink salt and red chili powder, combine and serve hot with your favorite sandwiches.
Also you can add vinegar of choice to your fries too. There is balsamic, white, apple cider, malt, rice, cane vinegar and some that is infused with tarrogon for an example. I put balsamic vinegar on mine and it was to absolutely die for.
