Hello I used to eat this wonderful soup when I was a kid and it was out of a can. I have saved several recipes for cream of mushroom soup in to my Pinterest for inspiration and came up with my own recipe and I hope you will enjoy it. The soup starts by pressure cooking in the instant pot and the like for 20 minutes unseasoned 1 kg or 1 lb of either chicken gizzards, chicken, beef veal lamb or goat in 1/2 gallon or 2 liters of water. After time is up and it beeps then press the quick release button and take the strainer and ladle and scoop the meat in to the strainer and let the stock drain from the meat and add the cooked meat to the bowl and then season them and use them for another dish. Also instead of making homemade stock you can use the same amount of water and 1 bullion cube instead and go from there.
Leave the stock where it is at for now because the rest is done on stovetop. Take 1 pinch of black peppercorns and grind it in a mortar and pestle then set it aside. Add either 1/4 cup of either olive, corn, canola, peanut, vegetable, avocado, grapeseed, sunflower or safflower oil to a large coldero on high heat, 1 container of button mushrooms washed and sliced, the contents of the mortar and pestle, 1 pinch each of white pepper powder, thyme, grated nutmeg and stir.
Add either 1 pinch of pink salt or vegtea seasoning or 3 dashes of seasoned salt or 1 bullion cube, 2 pats of butter, 3 dashes of either, maggi or knorr aroma, stir well to combine and the mushrooms are well cooked. In a large cereal bowl add either 3 tbs of all purpose unbleached flour or cornstarch and 3 handfuls of nido mix with a little of the stock and add slowly stir until your slury is nice and smooth besdies being lump free. Pour the surry on top of the sautèd mushrooms and the rest of the stock. Turn heat to low and let cook for 20 minutes by stirring occationally and cooking until it gets a little thick. At this stage you can turn off the heat.
You can serve this delicious soup with bread or even sandwichwes or this can also be used as a base for casseroles too.
