I remember one day one of the guys from an Egyptian band by the name of Black Thema. I think and I really love a lot of these bands and I love their music as well and I love other bands in the past but thier music is still great and still fresh in my opinion Cairokee, Wust Al Balad, Taxi and I met them all through Facebook as well as their music. One of the guys on Instagram one day had a sweet potato and he made it known that this is his favorite thing to eat. That word batatas which means potatoes in Arabic. The look on his face as he is about to comsume this yummy sweet potato is absolutly priceless it is because I love sweet potatoes too.
Since it is also summer and very hot in my kitchen that I ended up baking it in my instant pot. Place 4 cups of cold water in the lining and the air fryer basket that comes with the instant pot itself. Place a silpat that is big enough to place inside the fryer basket and add up to 3 sweet potatoes if they are small. If they are big you may as well cut them in half. Place the air fry lid on top and select bake at 350F or 180C for 20 minutes, when tone sounds and instant pot turns off then repeat for another 20, if it isn’t soft then one more time for 15 minutes.
From here You can let it cool and peel. The peel is easy to come off at this point and discard the peel. This way this yummy veggie is ready to be mashed and enjoyed by seasoning whatever you like on them. Also tthe vitamins remains in the vegetable. This can be done in the regular oven at the same temp buy putting a silpat inside the roasting pan and the time is the same also. Since it is hot in the summer for those that have instant pot and other types of multi functional cookers that this is. the best method so it doesn’t heat up the kitchen and the rest of the house.
From here you can use either 1 tsp of your choice of butter gheee, olive oil, avocado oil, macadamia nut oil, flax seed oil, coconut oil, almond oil, sesame oil, peanut oil, vegetable oil, corn oil, grapeseed oil, sunflower oil, safflower oil, canola oil or 1 pat of butter. You can also use the same amount of Hooshier HIll farm’s butter powder and just sprinkle it on your sweet potato and add no oil.
Add 1 tsp of either blasamic vinegar which are plain and the different infusions and they are all so tasty, Chinese black vinegar, rice vinegar, white vinegar, apple cider vinegar, tarragon infused vinegar, cane vinegar or rice vinegar or lychee vinagar. One pinch of grated nutmeg, mace, cinnamon, black, white, green, pink or mixed peppercorns ground in mortar and pestle that will get added to the sweet potatoes itself or 1 pinch of any type of herb such as dill, chervil, savory, tarragon, lovage, marjarom, rosemary, thyme, basil, oregano, chervil.
General seasonong of choice is 1 pinch of bullion powder and if you have just the cubes then crush the cube in mortar and pestle and use a tiny bit not the whole amount to the sweet potato. You do not want an over salty sweet potato, goya seasonador, adobo, kosher salt, seasoned salt, vegtea seasoning, Himalayian pink salt and sea salt that is plain or its various infusions too, Add 1 drop of hot sauce is another tasty option or 1 pinch of red chili powder or chapotle chili powder.
