I have had some excess batter left from making that fried fish it can also be used for pakora. You can use any type of vegetable for this pakora potatoes, chilies, onions, spinach, eggplant, karela (bitter gourd), tomato, cauliflower, okra, etc.
If you use cauliflower steam it until it becomes fork tender and drain. The rest is no problem if you use it raw . Again batter is 1/2 cup of besan (chickpea flour) with 1/4 cup of water. Add a little at a time until you have a batter. Add 1 pinch each of red chili and turmeric powders, 1 pinch each of anar dana and coriander seeds, 1 pinch each of pink salt and ajwan and mix very well to combine.
Now you can add your vegetables of choice and fry them in 1/4 cup of vegetable oil in a skillet cast iron or otherwise til golden and drain excess on a plate lined with paper towel.
P.S. You can also add 1 can of any type of canned fish of your choosing for a non veg version.
