Oh when I am going back to Peshawar, Pakistan for their yummy street food. Sita is a Hindko word meaning corn and they know how to grill it to perfection.
We all know corn is king. Lol I really agree to that because everywhere I go everyone is enjoying it.
Before I got started I turned the oven on to 350 Degrees Fahrenheit or 180 Degrees Celsius.
First I take the husks off of the corn and I wash it and I season it by adding in a small bowl tsp of olive oil, 1 pinch of hing, 1 pinch of red chili powder, 1 pinch of black salt and I have some amchur which are mango peels that are dried. I break off a tiny piece and add to mortar and pestle and grind to powder and add to the oil and I mix it and add it to the corn I had put on a grill pan. This was for 4 ears of corn.
I roasted then on a grill pan on stovetop until there was marks that formed on the corn and finished the cooking process in the oven on a baking sheet lined with aluminum foil and finished it in the oven for 30 minutes.
This is the indoor method and the outdoor method would be after you get the grill started and the coals start turning red then add the seasoned corn to the grill and cook for 3o minutes turning frequently.
You can find these spices at any Indian and Pakistani grocery store.
