One day I was looking on the internet for dinner ideas and I came across this lady who has the Kadria recipes blog and pinned the recipe in Pinterest. However the original recipe called for grated cassava, salt and vegetable oil to fry and I had embellished it I have changed the recipe to make it my own and it was very yummy.
The original recipe had fresh cassava in it and I used frozen cassava instead because it was in my freezer in a zip baggie. It came in a large bag and I had broken it down in to smaller quanities because we do not eat a lot of cassava at once and it keeps the waste down a lot and we are just two people.
I got out my food prossesor and started to grate my cassava after I cut it in half and took the string out of it in the center. I also added 1 pinch of pink salt and 1 pinch of xanthan gum. I put 1/4 cup of vegetable oil in my cast iron skillet and let it get hot. Anyway the xanthan gum and pink salt got added to the grated cassava in the food processor. I have a grater but i do not feel like grating frozen cassava by hand when I have a food processor that works like a charm.
My food proccessor is a Hamilton Beach and it I have had it for a long time and it still works very good.
When the oil got hot I took 1 tsp of the grated cassava mixture and rolled it in to a ball with wet hands. The xanthan gum is a marvolous binder. After I formed the balls, I put 4 at a time in the hot oil and kept turning them around until they are golden brown to keep them from burning. I put them in a small pot lined with paper towel to absorb the excess oil and repeated until all of that grated cassava mixture was used up.
This is great to eat with my mazano chili sauce and also with shito.
Another idea is make this for company and serve it to them and see if they really like it. They are great for all ages. Also they can be dipped in melted cheese and eaten that way too if the chili sauce and shito is not your thing.
This is truely an awesome snack.
