Here I am experimenting again, as one of my nephews calls it. 😀 However it is a tasty one and I am not the only one doing this. The verdict is just very yummy and I used 4 quail eggs again to give this moin moin its richness. You boil them for 10 minutes like you do regular chicken eggs. If you are using regular chicken eggs then boil 2 and then rinse and crack them under cold water after draining them in a colander and slice them and set them aside in the microwave safe glass bowl like I did and set them aside.
Open 1 can of crab meat and put it in the bowl with the eggs. Other options can include other shellfish like baby shrimp, sardines, mussels, oysters, squid, octopus, mackerel, tuna and salmon. Just be sure to keep the water or oil from the canned fish because this will give great flavor to the moin moin. You can even use corned beef in here if you want because it all depends on your taste and 1 tbs of red palm oil.
In a mixing bowl add 10 handfuls of besan (chickpea flour), the water or oil from the fish you are using and in my blender I add 1 tomato chopped, 1 pinch of crayfish, 1 bullion cube, 3 drops of maggi or knorr aroma, 4 smoked dried shrimps, 2 cloves of garlic, 1/4 cup of water, 1 red bell pepper chopped, 1 habanero or scotch bonnet chopped, 1 half of an onion chopped, the other half gets sliced and added to the bowl that the moin moin goodies are in. Add 1 pinch of grated nutmeg. Turn on the blender it can be immersion or regular blender that you may have. I whipped out my immersion blender because cleanup is a lot easier then my big blender and pureed everything that is in that canister that came with my immersion blender.
When I got it to the consistency that I wanted which has to be very soupy and no liquid particles remained then I added it to the bowl with the bowl that the besan (chickpea flour) is in and took out my mixer after I stirred the batter which was still kind of lumpy until I used the electric mixer.
I was feeling quite a bit of fatigue and was pretty tired so it came in handy. I got this on black Friday when I went with Mr. Riaz along with my sweet immersion blender and ipod nano 12 gig. omg he had to get him a tv and men and their TV’s humph.
My hand mixer is a Hamilton Beach. I had to replace my old hand mixer because it didn’t work anymore on low speed so it was time to replace the old hand mixer.
I used the hand mixer to mix the tomato pepper sauce in to the besan (chickpea flour) until I got a smooth and creamy batter. I poured the batter in to the bowl with the crab, quail eggs,palm oil, and onion and with rubber spatula I folded this in to the batter and scraped as much batter out of the mixing bowl in to the glass bowl. The glass one has a lid on it and it is perfect and steams perfectly in the microwave.
I cooked the moin moin on high in the microwave for 5 minutes with the top on then let it set f0r 10 minutes by setting the timer on the microwave , checking on it every now and then, I took the lid off of it and then let it cook for another 7 minutes.
If the batter is thin it would take longer to cook then a thick batter. Also I want to add quail eggs you can find in any Asian stores, besan (chickpea flour) you can find in a lot of Indian and Pakistani grocery stores and the rest of the stuff like crayfish, palm oil and smoked dried shrimp can be found in many African stores. Maggi and Knorr aromas can be found at nearly any store and bullion cubes can be found everywhere too if you find a powder then add 1 pinch of bullion powder when you are cooking you do not want your food to be too salty.
