For a long time I was a loyal golden temple atta (flour) user until there wasn’t any in the store. I was upset because there wasn’t any there and I always buy the 20 lb bags of chapati flour because Mr. Riaz is a roti eater. He is a Pathan of course.
They eat rice sometimes like if there is a wedding or something and they have to have some kind of quorma (a spicy stew) and some naan too.
Naan is great for a lot of dishes with lots of curry because it sucks up more curry. Chapatis is for a dry curry not a wet one lol. Chapati is more suited for keema (spicy ground beef).
It is very easy to make all I did was 6 cups of chicki atta (wheat flour) and put it in my huge mixing bowl. They are so nice they came with a lid.
I have a measuring cup that holds two cups of anything in my flour bucket. I should take a picture of it one day and post on instagram. 😀
The bag also says chiki atta and make sure it says no maida (white flour) is used. You can get this at Indian and Pakistani grocery stores. We have a chain here in Chicago that carries lots of stuff and they have everything you need and you are looking for. The name of the store is called Cermac.
Try Cermac for the chiki atta first and the brand name is Swad.
I also put 2 handfuls of nido in the bowl with the chicki atta (wheat flour), 1 pinch of pink salt. 1 pinch of baking powder, 1 pinch of yeast, 1 pinch of turbinado sugar, 2 tsp of yogurt and 1/2 cup to 1 cup of water.
I added just a little at a time mixing the whole entire time using my hand. I do it this way so I make sure I have a nice dough. It is similar to chapati dough but there is leavening inside to make the dough expand and rise to make it fluffy.
Do not add so much water at once, if you do you may have to throw it in the trash heap and you do not want to waste food at all. By adding a little at a time and mixing and kneading by hand until a nice dough forms, I added 3 tbs of olive oil to the dough and again knead for 5 minutes.
I cover the bowl and let it rest for 1 half hour to an hour. This is very good Yeast I have and I got a large bag of it because I bake a lot.
I got the tawa (griddle) nice and hot and I broke off 4 pieces of dough because it is just Mr. Riaz and me eating. A nice hot tawa means that your roti (bread) will not stick to the tawa.
I have a huge tray and you have seen it on my Nigerian egg rolls and pap recipe. I use this to keep my counter or table top clean. I dust my dough in to some more atta that I have sitting on a lid that was left from another bowl that I don’t have anymore and rolled it out with my rolling pen until it is a flat circle.
I don’t have any oil or cooking spray on a hot tawa and when it is nice and hot you really do not need. I watched as it is cooking I count to 20 and then flip to other side. It comes off very easy for me and I count to 20 again and flip and again 3 more times on each side then off in to my tortilla warmer with the cloth inside of it it goes and I repeat the process until the last piece of dough is used up and the roti is all made.
You can brush with ghee which is nearly like shortening or butter at the end and it is optional.
We prefer whole grains here in my house because it is a lot healthier then white flour. I hope you like this recipe and it is great and when done correctly it shows all of your love and care that you gave while making this recipe. You can also make with fried onion, garlic, cilantro, or even add 1 pinch each of khas khas (poppy seeds), dried kasoori methi, cumin seeds, kloonji,or even either black or white sesame seeds as a topping. Even 1 avocado can be mashed and added it to the dough which are purely optional.
You can even stuff it with paneer either with crushed black pepper corns,cumin seeds or both. P.S. On a hot day instead of turning on your oven use a multi functional cooker like instant pot or ninja foodie. If you do not have a duo crisp like I have then you can buy an instant pot air fry lid. There are accessories for these lovely cookers too. I put 1 cup of water in the inner lining and made the naan and brushed it on both sides with butter ghee. You can use oil too if you wish by following the instructions above. The trivet should be in the inner lining place the baking accessory called pizza plates on top and place the dehydrate lid on top of that. Place air fry lid, select bake then time at 376F then time for 20 minutes and start. The instant pot accessories are on Amazon or Target.
