Ok once I seen an instagram post and it was from My Active Kitchen and I think she did a red lentil moin moin. I said to myself, ok I have to try this.
For those who doesn’t know what moin moin is, it’s steamed bean pudding and until lately quinoa and corn has been used too. We are on the topic of red lentils for right now and it spans quite a few cultures and it is very delicious.
The Ethiopians use it to make misr wot. and this gets served on injera which is their flat sour dough crepe and it is just not made from just teff because it is expensive outside of africa. We will cover that in a future post Inshallah.
The Turkish use it for making their kofta and for ezo gelin soup which has bulgur wheat in it. Please refer to the turkish blogs for their yummy red lentil recipes.

Also this red lentil is the backbone of many Indian and Pakistani dishes and is a staple that is called dal (lentils or pulses). It is called masoor ki dal in Urdu. Now you know the background of this marvelous lentil.
I soaked 6 handfuls of red lentils overnight after I had washed them very good. The next day I got up and I took out my immersion blender and the container it came with.
I put the red lentils in there and ground it very easily I added 1/4 cup of water because when I looked first the lentils had expanded before I ground them. After I got the consistency I wanted which is a puree then I started adding more things.
I boiled 4 quail eggs for 10 minutes and cracked and peeled them then sliced them in a glass bowl that came with a lid and set them aside.
To the pureed red lentils I added 1/2 of a shallot, 1 bullion cube, 3 dashes of maggi or knorr aroma, 1 pinch each of crayfish, red chili powder and grated nutmeg, 1 piece of sun dried tomato, 2 cloves of garlic and with my blender mixed it some more with the blender.
I returned my attention to the glass bowl with the sliced quail eggs in it and added the other half of shallot that I had sliced with 1 tbs of palm oil, 3 tbs of caviar (fish eggs), 2 sweet peppers that I had sliced and mixed and finally my red lentil mixture.
I stirred it to combine everything and made sure the caviar (fish eggs) got very well mixed in the moin moin batter. I put the lid on this bowl and put it in the microwave for 5 minutes.
When the microwave sounded that time was up, I checked my moin moin and it was really nice and lovely the way a moin moin is supposed to be.
It doesn’t have to be just caviar (fish eggs) it can be with any type of fish you prefer or you can use corned beef if you wish.
I hope you will find this moin moin recipe to your liking. P.S. you can add 1 can of corned beef or other types of canned fish for a different variation.
One thing I have to say for myself is I love to read and reading opens the door to lots of good things. It is a powerful learning tool and it is up to you if you want to learn.
For me it was an escape from my daily troubles and I use my love of reading for good things only. So far it lead me in to the African food bloggers sites and from there read the recipes and then started to try them out. Mr. Riaz thinks I am a little nuts, lol >3 😀 He enjoys and that is what matters.
