I love eating stuffed avocados on a very hot day. Believe it or not I really don’t feel like cooking in all of this heat. I either make a salad or stuffed avocados when I want something quick and when I don’t feel like cooking.
I cut an avocado in half and remove the pit and add 2 dashes of balsamic vinegar.
I open 1 can of tuna fish in water, 1 pinch of cilantro or parsley, I would chop in to very small pieces of 1 seranno or 1 jalapeno chili. I added 3 dashes of Goya adobo. If i don’t use them then I add some manzano chili sauce or I would add 1 drop of ghost pepper or insanity sauce. They are made by Dave’s gourmet. and they are very delicious. I add 1 tbs of mayonnaise, 1 small onion and 1 small tomato chopped and i would mix it up and stuff it in an avocado.
This can be used also with tiny shrimp that is in a can, crab meat, sardines, salmon and mackerel. This is a great salad for hot weather and here is something else I like to do too, I enjoy slicing the avocados and using balsamic vinegar and opening a small can of fish on top of it it is also very tasty.
The picture on top is the sliced avocados and I used sardines in mustard sauce. If you wish however eat them with crackers or tortilla chips. I also suggest to drink some mineral water also to go along with it.
It is light quick and healthy so what more can you ask for, right?
