I got this idea on how to make corn moin moin from Wives Connection Townhall blog. It is a good lifestyle blog that has great recipes too. Me however I love to cook and I like looking for more recipes. Corn is very expensive and I am not going to spend a lot of money on corn just so I can make moin moin. I live in the area in the midwestern part of the United States and it is a shame corn prices are so high here.
Corn is great stuff it is king here and I agree with Nigerian Lazy Chef when she says corn is bae lol.
My mind is great with languages I swear but now we have to get down to what matters most here is making this yummy moin moin.
I soaked 6 handfuls of cornmeal with water the night before. Just make sure the water line is slightly higher then the cornmeal. The next day I got up and boiled quail eggs and two pieces each of salt fish and dried smoked fish because I forgot to soak them again to get the salt out of it. Oh well this works too. I boiled the dried fish and saltfish for 15 minutes and the quail eggs for 10 minutes. I drained the quail eggs cracked peeled and sliced and put them in the ramekins I have two of them and the rest I used in the glass dish here. I chopped 2 green onions and put them in there also with the eggs. Also I added tiny pieces of red bell pepper I had cut up which the lion’s share went in to the moin moin batter. I put that in the blender along with the cornmeal I had soaked in water and blended it in to a nice paste. I also added 3 green onions I had chopped for the batter, added 1 bullion cube, 3 dashes of knorr or maggi aroma, 1 pinch each of crayfish, red chili powder, grated nutmeg, and paprika and 1 tsp of tomato paste.
I took 4 tiny pieces of the red bell pepper and put it in there with the eggs in the dish and I also drained and rinsed I was boiling and tore them to pieces and divided them in to each ramekin and big glass bowl and set it aside.
The rest of my bell peppers I had put in the blender and blended it in the moin moin batter. I added 1 tsp of palm oil to the ramekins and the big glass bowl and added the moin moin batter first to ramekins and then big glass bowl last.
I put cling film over the ramekins and one at a time I cooked those for 3 minutes each and the big glass bowl came with its own lid was 5 to 6 minutes.
I have to say I really enjoyed it and am looking forward to wanting to do more moin moin recipes so stay tuned.
