I decided on making up a spice mix I can use for some type of dish I made up which I will post very shortly. I drew some inspiration from the daring gourmet and the food.com sites and desided to make one of my own. With my usual whole spices.
I put in my mortar and pestle 5 whole allspice berries/ or grated nutmeg, if you are using nutmeg since it is kind of strong just grate enough until you have enough for a tiny pinch.
I also added 1 green cardamom, 2 cloves, 1 pinch each of coriander seeds, cumin seeds, black peppercorns and shai zeera seeds and crush everything in mortar and pestle and add 1 pinch of paprika and cinnamon powder. If using cinnamon stick, you just break off a small piece and grind it in mortar and pestle and mix. Add 1 pinch each of dried mint and rose petals and mix. These last two are optional.
