This spice mix is the most favorite and widely used everywhere nearly on the Indian Sub Continent. It is in a great many dishes and it is nearly impossible to describe and count them all.
All we know it is simply delicious. Here is my garam masala recipe and all of its glory and I hope you enjoy making it like I do. This is better then the ready made rubbish that is sold in the stores.
In my mortar and pestle I added 1 small broken pieces of star anise seed and cinnamon stick, grated dried ginger or 1 small piece of fresh ginger, grated nutmeg, the grated dried ginger and nutmeg should equal 1 pinch each.
1 each of a strand of mace, whole round red chili, black cardamom, green cardamom, bay leaf, 2 cloves, 1 pinch each of black peppercorns, coriander seeds, fennel seeds, cumin seeds, grind in to a coarse powder and use this asap in your favorite recipes.
In my blog posts that requires this spice, there will be a link to this page for now on. When I made it and used it in the dal tarka tonight, Mr. Riaz smelled this even before he came in the door and his mouth was full of water. Also your kitchen will smell nice too.
