I had seen that Kitchen butterfly has talked about fonio in Instagram. I told her I am going to try making it. Here is my idea what I am doing for this dish. I didn’t know what I was going to do with the sauce from all of that meat.
What is fonio? Fonio is another type of African grain and this is from West Africa not East like the grain teff. Fonio is a super food like teff and rich in nutrients. Also quinoa is in this bracket too but the latter is from South America not anywhere near in Africa.
I said, “hummm I got an idea that I am going to make fonio with this.” Mr. Riaz didn’t think it was such a good idea but I convinced him and here is the result.
I added to a cereal bowl 1/4 cup of fonio and 1 cup of water. In a pot on high heat I added 1/4 cup of olive oil. 1 caramelized 1 onion or shallot. I added 1 drop of chili sauce or 1 pinch of red chili powder. I added 1 bullion cube or 3 pinches of vegtea seasoning, 1 pinch each of parsley, thyme, rosemary, basil, oregano and marjoram. Add 3 dashes of maggi or knorr aroma.
I brought this to a boil and added the meat juice mixed with barbecue sauce. I reduced the heat to low after it started to thicken. It’s kind of violent at this stage like a volcano erupting and you do not want it to splatter. Add 1 cup of any type of frozen vegetable at this stage which is the only thing that is optional.
Keep stirring so it doesn’t scorch and when it is fully absorbed turn the heat off and cover then let sit 15 minutes before eating.
