I used a different pepper from the run of the mill green chilies when I made this raita. Manzano chilies has the heat a little bit hotter then an habanero and has a fruity taste and smell. To me they smell so good.
I mixed 1/2 cup of yogurt with 1/4 cup of water and added 1 pinch each of chat masala and red chili powder. I cut the mazano chili in half. Unlike any other chili these are bigger and have black seeds in there. Take the seeds and vein out of these chilies with a front end of the spoon. Do not put your hands near your eyes. If you wear contacts wash your hands clean your contacts and put them back in the case and wash your hands again before you start cooking anything with chilies in it.
I am sparing you a very painful lesson and it is very unpleasant to have this happen. That is why I have gone back to wearing glasses.
After taking the seeds and the vein out chop it very finely and add it to the yogurt mix followed by 1 cucumber washed and diced and 1 onion, or shallot or , 2 green onions diced and combined with the yogurt mixture.
I gave this to my husband once and he is like, benazirrrrrrrrrrrrrrrrrrrrrrrrrr , it is too hot!!!!!!!!!!!!!!!!!!!!! What are you trying to do to me?
I told him sorry about the chili I had no idea it was going to be that hot because it was my first time I used manzanos for raita. Next time I use them for making hot sauce.
