This is my favorite and a lot better then chai (black tea that is boiled in milk). This is very healthy and great when you are eating paya which are feet or trotters of goat lamb or sheep and other very oily foods. This is the favorite drink of the Pathan or Pashtun people. My husband’s father was Peshawri meaning originally from Peshawar area and my mother in law was Pashtun from Momand tribe. Sadly I never got to meet my father in law he passed away before I had a chance to meet him and my mother in law was an absolute sweetheart and I really miss her badly.
Every morning this would be my breakfast while I was in Pakistan along with paratha and oily flat bread. The properties of this tea is to cut the fat and it has great health benefits. It is something that Pashtun people have known all along and they knew a lot longer then anyone else knew about it. Ok lets make kawa.
This is straight forward and a very simple recipe. I put on to boil in a sauce pan 1 quart or 1iter of water and let boil. I put loose green tea in to the tea egg and drop it in the boiling water, if you are using a tea bag you can do the same thing and you won’t be bothered with straining. Use 1 teabag of green tea if you want to. Some even drop tea leaves in to the sauce pan when the water boils but if you do this method then use a strainer. I would take also 2 green cardamoms and crush it in a mortar and pestle to open them and add them in with the green tea and I add 1 tbs of honey then I add 1 tsp of lemon juice. This will make the green tea very tasty and make it more healthy. If using a tea egg like I do take it out of the pot. If using a teabag remove and discard. If you dropped green tea leaves in the pot when the water was boiling take a strainer a small one and strain it in to a small cup and the rest in a thermos for later.
This is perfect anytime you eat something fatty to clean your system and Indian and Pakistani food is very oily and fatty and so is African food too.
