Homemade Sugar Free Ice Cream, Frozen Yogurt, Sorbet, sherbet & Italian Ice

Actually I am going to make it easier for you and for myself because of this horrible carpel tunnel syndrome that I am going to link the first ice cream recipe that has been churned by my old ice cream machine. I had it for over 30 something years and I bought it at a True Value Hardware Store that was on Morse Av here in Chicago. However they have been bought out a long time ago and them and Ace Hardware has been gone out of buisness as well and both had a housewhere section.
I am an old lady and I have not used that machine in ages. I got sick and tired of filling up and using 8 trays of ice cubes and going trough a box of table salt to churn ice cream. It was more then a pain in the bum because freezer space is limitied. So I am going to post a link to this post because it can be used over here in this ice cream maker too. This one was homemade peach Ice cream you see in the picture using this method.
This new ice cream maker is very easy to use and I had it on my wish lists on Walmart, Target and Amazon. I bought it from Target. I washed it and then towel dried it including the two spatulas it came with and I still store it in a plastic bag to keept it clean. Homemade Sugar Free Ice Cream, Sorbet, Sherbet Or Italian Ice Please follow the recipe on the right. However I will do the frozen yogurt one here because I forgot to put there in the old post. Forget the churned ice cream for right now unless if you still have your old machines. You will need this too Sugar Free Salt Caramel is what you will need if you make vanilla or chocolate ice cream only.
My Sous Vide Yogurt is what you will need to make frozen yogurt. After this yogurt is finished then you can place it in the refridgerator. The next day you can use this to make the starter by adding 1/4 cup of either suger free syrup, agave nectar, monk fruit sweetener, or 6 packets of stevia. Here you can add 1 cup of fruit of choice like apple, peach, passion fruit, pineapple. strawberry, cherry, rasberry, banana, mango, blackberry, blueberry, orange, blood orange, lemon or lime juice that has been fresh squeezed only. Take an immersion blender and blend until smooth. Now you have your frozen yogurt starter.
For Ice cream starter Add 1 cup each of half and half or heavy cream and milk with 1 egg. If you want egg nog ice cream then use 3 eggs and grated nutmeg equal to 1 pinch. If you would like peanut butter Ice cream then add 3 tbs of pb fit peanut butter powder sugar free. You can get this at Walmart and Amazon. Crumble up 5 sugar free oreos for cookies and cream. Make sugar free salt caramel and let cool then chill until nex day if you are using. You can also use sugar free Lillies sugar free chocolate chips. They come in dark and white chocolate. You can pair it with vanilla, chocolate and peanut butter ice cream.
You can add 1 pinch of either instant coffee or 2 ozs of strong perked coffee to either vanilla or chocolate turning it in to a mocha base. I really hate instant coffee and I never drink it at all period. You can even add 1 tsp of matcha green tea to the vanilla base to make matcha green tea starter. Your various chopped nuts including peanuts can be added too. Also 1 drop of vanilla essence can be used for everything except for italian ice and sorbets and same goes for almond essence which is alcohol free and can be obtained at every Indian and pakistani grocery store. If you want peppermint Ice cream, there is sugar free peppermint candy for sale on amazon. Just break up up to 10 peppermint candies and add it to the vanilla ice cream base.
Amazon also sells sugar free toffee candies and use the same amount with 2 pats of butter for homemade butter brickle ice cream. For butter pecan use 2 pats of butter and crush 10 pecans and add to vanilla base. For walnut ice cream crush 10 walnuts and add to vanilla base.
For malted milk ice cream you can put 3 tbs of malt powder in either chocolate or vanilla base and blend then chill. Also you can add 1 pinch powdered food color which is optional. These you buy at Indian and Pakistani grocery stores too.
Now for sorbet you will need to add 2 cups of filtered water and puree your choice of fruit. Here it is completely vegan because there is no dairy and eggs used. Also add your sweetner of choice. However if you are using a fruit like apples and bannanas then it is advised to suirt lemon juice on it to keep it from oxidizing. It means becoming brown and they turn brown mighty fast. You can also garnish al of these with frozen edible dried flowers of choice. You can buy them from Amazon.
Now for Italian ice it is up to 10 lemons only that needs to be juiced and add 2 cups of filtered water and sweetener of choice. Take the rind of 1 lemon that you have juiced and cut it in to tiny pieces and add it directly to the lemon juice mixture. This is your Italian ice starter and no need to put anything else in it especially more additional flavoring. The rest of the lemon peels you can cut up small and place it in zip baggies and place it in the freezer. This goes in other dishes and deserts too that would need lemon peel. However you can do orange and blood orange too. Lime is quite questionable because the rind is way too bitter. The lime is perfect for sherbets only.
Now place your starter of choice in the refridgerator. Next place the tray which is blue and silver and this goes in the freezer for 24 hours. Depending on what you want to make like ice cream that has chunky bits too. Spumoni is one of these ice creams but you would need to make 3 different types of starters too. This is a cherry ice cream that you would have to use 1/4 cup of cherries with the pits removed divided. The first part gets pureed in a vanilla ice cream base then the second part does not get pureed. Put that in the refridgerator then add pistatios and green food color to vanilla ice cream base and crushed pistatios put that in the fridge. Also you would need a cocolate ice cream base and add 1/4 cup of lillies sugar free dark chocolate chips to the chocolate ice cream starter. Then you take the tray out of the fridge and and add the starter to the tray and pop the tray back in to the freezer and remaining starter back in to the fridge.
After 30 minutes check and see if it is frozen and it usually is and take a freezer safe container with a lid and gently cut the pieces of ice cream out with the spatula that comes with this maker and it is a part of the set. Read the instructions before you use it. Then lift the squares of Italian ice, ice cream, frozen yogurt, sorbet or even sherbet and place it in the freezer safe container. Place the finished for now product in to the freezer so it does not melt. In the mean time again place some more starter and place the tray back in to the freezer to freeze. Repeat until no more starter.
However if you want Nepolitan then you have to make chocolate, vanilla and strawberry ice cream starters. After these are chilled for spumoni you will need to add chocolate that has the sugar free chocolate chips in to the ice cream maker tray then freeze in freezer then scoop with spatula that is a part of this set then next is the pistacio base repeat process. Place that with the chocolate chocolate chip then the cherry and alternate until all 3 of these are gone. With Nepolitan it is the same procedure.
Now if you want to add sugar free salt caremel to either vanilla or chocolate ice cream is remember all of these has to be chilled before using. First add the chocolate or vanilla base to the tray and place it back in the freezer to freeze. Next take the frozen vanilla or chocolate ice cream and drizzle this sugar free salt caramel on top and place it back in the freezer to set then scoop to remove and add to the freezer safe dish and place in the freezer then repeat until it is all gone.
