Microwaved Plantain Flour Moin Moin

Well as it seems as it looks like I am going to have a ton of moin moin recipes for the microwave. Any way it all turned out nicely. I had a guest this weekend and this was the last dish to be made and I am glad I had the soup and the rice done by the time she got in.
One thing about moin moin is once you eat them you can’t stop and they are so addicting.
I even told Duchess O Kitchen that I was going to use plantain flour to make this moin moin because I wanted to try something different and she thinks it is a splendid idea.
I made some blended tomato and red pepper sauce also for the jollof banga and the plantain flour moin moin by using 1 tomato, 1 red bell pepper, 1 clove of garlic, 1 slice of ginger that I peeled washed and chopped I added that to the blender too, 1 bullion cube, 3 dashes of maggi or knorr aroma 1 onion, shallot or 3 green onions cut to pieces and 1/4 cup of water and I blended it until it is smooth then I set it aside.
In a pot I boiled 1 chicken egg for 10 minutes because I was out of my normal quail eggs. I took out a mixing bowl and added 5 handfuls of plantain flour, half of the blended red pepper tomato paste, 1 pinch of red chili powder, grated nutmeg, 1 pinch of crayfish and 1/4 cup of water, 1 pinch of bonga fish powder then I mixed to combine and until it is smooth. I took the electric mixer and mixed the batter for 5 minutes to incorporate some air in to the batter to make it light.
In the glass microwave safe bowl I added 3 chopped green onions, 1 crumbled chicken egg, opened 1 small can of tuna and emptied it in to a bowl, added 1 tsp of red palm oil. Any other type of canned fish besides tuna can be used such as any type of fish that has water, oil or tomato sauce or 1 can of corned beef can be used too as well.
I put the moin moin mixture in to the bowl and stirred everything to combine and set the microwave for 5 minutes. I checked it and it wasn’t set yet so again I cooked it for 5 minutes. I checked once more and it was getting there and not quite that I took the lid off of the bowl this time because it had steamed enough and cooked it in the microwave for 3 more minutes and this time it looked about right. It was no point on cooking it even further because the moin moin would be overcooked.
After it cooled it became very good it was like a moin moin should be. I hope you like it.
