Carne Bif With Spanish Yellow Rice Or African Corned Beef Stew

I am going to do this my way for this recipe. It is because also the Nigerians has a corned beef stew also. The African corned beef stew starts with a blended pepper sauce. It is made by putting in to a blender 1 clove of garlic, 1 scotch bonnet or habenero, alternatively 1 pinch of red chili powder or African yellow chili powder can be added. Add 1 half head of cabbage (optional).
Please bare in mind that the African chili powder can be very hot so please use sparingly. You can buy it at Old World Market here in Chicago. Also in blender add 1 onion or shallot and also 3 green onion cut finely, 1 tomato, 1 red bell pepper and blend to make sauce.
Add 3 tbs of red palm oil to a pot, add 1 pinch of thyme the blended pepper sauce and cook until you see cracks in the sauce, add 1 pinch of crayfish, 1 bullion cube, 1 pinch of Curry Powder, 1 pinch of basil, 1 pinch of oregano, 3 dashes of maggi or knorr aroma, 1 can of corned beef and stir until it until it is very hot. I use the halal corned beef in a can. This is served with either brown or white rice. Check the link below on how to cook rice. Also this can be eaten with boiled yam if you do not want to eat it with rice.
Now I am going to write two more recipes on this page because in a way it is aloso very much related. First make sofrito and posting link below. The sofrito recipe is on this page.
Halal Pasteles With Arroz Gandoules
After making sofrito I added 1 can of halal corned beef to the pot to start making the carne bif after adding 2 tbs of olive oil. I added my sofrito, 3 dashes of adobo, 1 half packet of sazon, stirred I added 1 aji amarillo or other type of chili of choice after I have deseeded it. They are chilies from Peru and they are orange color and long looking like your finger. I also added a mix of capers and Spanish olives stuffed with pimentos inside into this meaty stew.
This is very hearty and it can keep you full for hours. I also added 1 tbs of tomato paste and 1/4 cup of water and let it cook until it got thick. I also added 1 pinch of oregeno and 1 pinch of black peppercorns and ground them with morter and pestle then added it to the carne bif. At this stage it is ready to eat with either yellow rice which I have paired with this or pan de agua. I am going to do a post on pan de agua one day so stay tuned.
For Spanish yellow rice, I have made the sofrito first. the link above has sofrito recipe on that page. I added 1/4 cup of olive oil to the pot and I washed 1 cup of rice. It can be any that you prefer. Just wash it until the water turns clear. I added this to the pot then added 1 pinch of turmeric, sofrito, 3 dashes of adobo and 1/2 packet of sazon and 1 pinch of safron. I stir and add 1 quart or 1 liter of water then bring to a rapid boil on high heat.
I reduce the heat to a simmer and cover the underside of the pot with either aluminum foil or a banana leaf. I set the timer for 20 minutes and keep checking it at this stage of cooking. When time is up, I check on the rice and the water to see if it is absorbed. I turn off the burner and cover the pot again and let sit for 20 mintues.
After 20 minutes is up, it is now ready to consume. Eating carne bif is great with yellow rice and I really love it this way. Please let me know how you like this post.
