Every Eid we end up making semiya. This yummy treat is all over the Sub Continant of Asia. It is made and eaten the first thing on Eid. You know when Eid comes is when this is being made and eaten. There would not be an Eid without this dish.
I make it diffent then most people because I use something totally different then white sugar. Note to this ingredient that I am using while making semiya, I am now going to tell you on how I make it.
I brought 2 liters or 1/2 gallon of milk to a gentile boil. I added 1/4 cup of agave nectar and gave it a stir. Agave is very nice and tastes nearly like honey. It comes from the stevia plant which is a succulant just like a cactus and aloe vera.
The nuts of choice are pistacios, almonds, cashews and peanuts. I added 3 pinches of pistacios to my mortar and pestle and ground them to add to the milk. I added 1 drop each of keera and rose essance. I like this a lot better then rose and keera water which is also used for flavoring but it is a weaker form and the sent just goes it does not linger which is not a problem with the essences.
I added 3 green or small cardamoms to my mortar and pestle and broke them up and added it to the milk mixture. Just make sure it is on low heat so it does not burn or scorch. The dried fruit of choice is pieces of coconut, dates and raisons. I added 3 dates which I cut in to tiney pieces and added that to the milk and then finally I got to add the semiya.
This semiya we get is already roasted before they package it. It goes sof in seconds while in contact with hot milk. I added 1 package and sorry it is kind of dry looking so please excuse me. Any way it still is delicious and we really enjoyed it. You can turn off the burner now. 😀
Now Ramadan is over until next year that I really miss it. Even if it is not Eid you can still enjoy this whenever you have the urge to do so. It is very easy and above all means necessary, go ahead dig in and enjoy yourself.
