Asian Broiled Or Baked In Oven Whole Fish With Rice Shitake Mushrooms And Wakeme Seaweed

Actually I want to address an elephant in the room. I am very upset about my current situation and I am stuck with having a landlord that does not respect me or anyone else for that matter. I can not wait for November to roll around where I can pack up our things here and move the hell out of her damned building. She thinks she is miss it because she has several buildings. When I first moved here over 20 years ago and I am shocked I lasted this damned long. Mr. Riaz and I seen lots of people come and go and they flat out did not stick around.
Honestly I do not blame them. This stupid lady that used to live under me was her damned bestie and she lied on me really bad and my landlord had a bloody nerve to call my own husband at work and spread that lie. This did not stop right there. This idiot continued to scapegoat me even again lying on me saying to Mr. Riaz that I pushed her which I didn’t. I also remember that she even got up in Mr. Riaz’s face wanting to fight him when she called herself picking up the damned keys. I told him stop arguing with that bitch because she won’t caugh up the keys after we paid our security deposit. I told her then give us the keys and she did so reluctantly.
This is not hyperbole. It is a cold hard fact. I even reported her a few times for tenant harassment. Aslo this same bitch nearly a year ago has hidden the keys here in this very apartment that I am now staying and we had to go and hunt and peck for the keys one key at a time. She also wanted us to do her damned job with the RTA packet of my moving papers. She does a lot of bad things and is money hungry and the housing agency here in Chicago handles my section 8 voucher. Besides They know her number.
For any tenant that are on the section 8 voucher or paying full rent and living in an apartment building paying rent to a landlord, please know your rights. Do not and never allow a bad landlord bully you. Believe me they will try. I even told the housing specialist that this bad landlord loves to call my husband and lie and stir up a lot of bullshit. This was after I had completly told her off and I am not going to allow her to push me around.
Now enough said on this one on my broiler pan I turned the broiler on high and added 1 sheet of aluminum foil with a sheet of parchment paper on top of it. Spray it with cooking spray. For 1 or 2 whole fish or if using butter fish the yield is 4. Scale gut and remove the gills from the gill flaps on the whole fish. If you do not want to do that then it is ok to use filets or fish that has been steaked.
Add 2 tsps of lemon juice after cleaning the fish to remove the bad fishy smell. In a small processor add 2 green onions chopped, 3 Thai chilies, either 1 lime leaf or 2 strands of lemongrass, 1 pinch of tamarind, either 1 small piece of ginger or galangal, 3 cloves of garlic chopped, 1 drop each of sesame oil and chili oil, either 2 tsps of Chinese black vinegar, rice vinegar or lychee vinegar, 2 tbs of lime juice or key lime juice, 2 tbs of water, 2 tsps of non alcohol mirin, 1 pinch of msg, Add either 1 dab of oyster sauce, crab paste, shrimp paste, or 1 drop of fish sauce, either 2 tsps of Braggs liquid aminos, coconut aminos, soy sauce, tamari or ponzu, or sea salt, 1 pinch of 1 pinch of either pink salt, kosher salt, Sichuan peppercorns. Blend this all in the mini processor and put this all over the fish and inside the fish’s cavity.
Wrap the fish first in the parchment paper and then aluminum foil and place it on the broiler pan to be put in the broiler for cooking. If baking then put in a large cast iron skillet and place in the oven temp of 375F or 190C. Broil for 15 minutes then turn and repeat until fish is done. If baking then it is 20 minutes then turn for whole fish and for steaked on filets it is 15 minutes for oven and 10 minutes for broiler and repeat until done. The fish itself must be opaque and seperating from the bone.
Now the fish part is done, we can address how we are going to cook this rice. I used jasmine rice for this but however you will need to wash the rice until it is clear because it is quite starchy. Then put it on the stove on high heat to boil and add either 1 dashi packet or make your own and in a couple of posts I have described that you add a couple of pinches of bonito flakes and kombo seaweed. This will be enough dashi for this dish or use 1 bullion cube or 1 tsp of bullion powder, 2 green onions chopped, 3 dashes of maggi or knorr aroma, 1 pinch each of dried shitake mushrooms and wakeme or even add 1 sheet of nori crumbled, 1 drop of non alcoholic mirin.
After the rice is brought to a boil cover the pot and reduce the heat to simmer for 15 minutes. From here keep checking the rice to make sure it is not sticking. After the water evaperates and the rice is done then turn off the stove and let it sit covered for 20 minutes undisturbed. Serve with sombal and hoisin sauce and you can add a little siracha just in case if you want to change it up. The sombal is the better bet if you are a diabetic compaired to siracha. It provides heat with a great deal of flavor.
