Rabbit Seasoned With Suya Spice

Hi there, I have another recipe for you involving rabbit. Some people have never cooked a rabbit before. The instructions on how to clean one just before cooking is easy. First I set the oven on 375F or 190C.

In a large mixing bowl I had took 1 rabbit that I had thawed out in my fridge. I looked inside the cavity of what was to soon be my dinner. Mr. Riaz won’t eat rabbit. I know everyone is going to tell me Benazir you are just plain naughty. This about when I tell you when I made molokhia, I used rabbit last time I made it. I tricked this poor guy in to eating it. He said to me, “Benazir what did I just eat?”

I said; “surprise Riaz you just ate Bugs Bunny!” He said toba toba. I told him well rabbit is zabiha halal. Also it tastes nearly like chicken. Well some Africans eat bush meat. So rabbit is a game meat so yeah It would be classified as bush meat I think.

If not cleaned properly it has a gamy smell that it can be off putting. That is why I made sure that there wasn’t any internal organs lingering about. It was a clean hollow cavity but check anyway. It is better to be safe then sorry. There was a tiny bit of fat that I removed this time. I added 1 oz of white vinegar to a big mixing bowl and placed the rabbit on top of it. I filled the bowl up with water and swished the rabbit in the vinegar solution and rinsed several more times.

I placed 1 sheet of aluminum foil on a cookie sheet then sprayed with cooking spray. I placed the rabbit on top of this and made my suya paste recipe. I added this and the 3 dashes of maggi or knorr aroma around and inside of the cavity of the cleaned rabbit itself.

I wrapped up the rabbit inside of the foil and placed it back on cookie sheet then placed it in the oven for 30 minutes then turned to other side and cooked for another 30 minutes. Repeat until the rabbit is nice and golden on the outside and the meat is tender and falling off of the bone.

Any side dishes like jollof rice jollof pasta concoction rice and even banga rice is just perfect for this dish. Even coconut rice and beans is a winner. Please let me know in the comments what you think of my recipe.
