Homemade Biscuits

I haven’t had homemade biscuits in ages and they really are a treat. They can be eaten mostly with gravy and with either fried fish or fried chicken. This is great for any time of day in the moring for breakfast, lunch dinner, etc.
Preheat the oven at 400F or 200C. Get out a large mixing bowl and if you do not have a sifter then a strainer and a spoon will do for sifting the flour. The sifting makes the flour light and airy. Add 1 cup each of whole wheat and all purpose unbleached flour. 1 pinch each of baking soda and pink salt, 2 pinches of baking powder. Sift the flour in to the bowl. If using a strainer use a spoon and stir the flour mixture around until there is no more in the strainer. This has the same effect as the sifter.
I know I need to get one myself. I do not have one so I had to make do with what I have. After I got it sifted, I added In to the flour 3 tbs of ghee, 2 pats of butter. I mixed it around with my hands until it looked like it was a mealy texture.
You can mix 3 tbs of nido mixed with 1/4 cup of water or add 1/4 cup of buttermilk or just plain regular milk. It is also called sweet milk by people who came from the south. Honestly I really prefer buttermilk.
You can add a tsp of grated cheese or powdered cheese by Hooshier Hill Farms or Auguson Farms with powdered butter by Hooshier Hill Farms and or mixed herbs which is purely optional. I would like cheddar cheese which is perfered. I got the idea of cheddar biscuits idea from Red Lobster. My youngest daughter picked up a box of cheddar biscuit mix a couple of years ago. One day I will try out the the cheddar recipe in biscuits.
Make a dough also this recipe can be doubled. It depends on how many people you are feeding. Let the dough rest for 10 minutes.
Spray a cast iron skillet with cooking spray. Here you can either do two things they are the cut biscuits and the drop biscuits. For the cut ones, dust a clean surface and dust your dough in all purpose unbleached flour. Roll out with a rolling pen. Just make sure that it is not rolled too thin because this is not a pie crust here. roll it out lightly and dust your big round cutter in flour and cut the dough with this and lay them in the skillet. They should look fat.
For the drop biscuits that I made the dough in to a dough not a batter. It is similar to making bread. I broke the pieces and shaped them until they are round. It should be the excact size you see in this picture. Place in cast iron skillet antd then place it in the oven for 15 minutes. Turn on other side and cook for 10 minutes. They should be golden brown on both sides. In instant pot place 2 cups of water in inner lining. Place air fry lid select bake and cook like regular oven temp at same amount of time pot in pot method. The image below the profile picture are the cut biscuits and this one is just all purpose unbleached flour
You can also enjoy it with butter and honey.
