My Timatim Fitfit

Actually I seen this video from  How To Make Great Food site. They have these Ethiopian recipes in Amharic. However I was looking for a text in english and I couldn’t find one. This  is the picture I took myself after  I made it so I am not pinching from anyone. Also I had some left over injera.  If I didn’t have any leftover then  I would make a fresh batch. Also make Niter Kibbeh

I usually get between 7 to 10 injeras in a stack when I make them which is enough.  In a cereal bowl I would add 1 or 2 torn in to bite size pieces of injera, 1 tbs of olive oil, and niter kibbeh, 1 pinch of pink salt or vegtea seasoning,  4 tbs of water. 1 green chili deseeded, 1 tomato, 1 small onion or shallot.

These all get mixed together before you even add the injera. This is like a bread salad and very yummy.  Tear the injera in to tiny pieces and add it to the oily mixture and keep mixing and stirring until it is all mixed together and the injera should be soggy.

There are other types of fitfit also known as firfir that I am going to attempt on making so  stay tuned.

The list goes on etc. and of course I love latamore and luther vandros, the beatles, rolling stones and Yusef Islam is also one of the greatest voices and Allah blessed them all with such great talents.
