African Fusion Ribs

I have to mention Doony from Doony’s Kitchen blog so her yajichurri which she never gave the recipe for and it is a secret ingredient with Doony. I read her blog a lot and have gotten some of my ideas on now to make African dishes. Yaji is another word for suya spice with chimichurri sauce I made and set aside before making this dish.
Any way this dish has two methods to cook because as with ribs takes a very long time to cook. It calls for 1 lb or 1 kg of ribs of beef or beef shortribs too, lamb, goat or veal. Preheat the oven to 375F or 190C. Season the ribs and place in to a large cast iron skillet sprayed with cooking spray before placing it in the oven.
The seasoning is 1 bullion cube, 3 dashes of maggi or knorr aroma, the suya and chimichurri recipe. The link is above for the recipes.^^^^^ Add 1 pinch of uziza seeds in mortar and pestle and grind in to a powder then smear on to the ribs or short ribs.
Bake the ribs for 30 minutes, flip and cook for another 30 minutes. After this on a hot grill cook for 10 minutes per side. The fat from the ribs in the cast iron skillet can also be placed in to jollof rice, jollof quinoa, jollof bulgar, or even jollof pasta for extra flavor.
