White Bean Moin Moin

As we all know for those that know me very well knows that my love for moin moin has no bounds. So far I have decided to do a white bean moin moin. It is 2 cups of any white bean such as navy, great northern, small white beans or kidney beans. Wash and add these beans unpeeled and add to pressure cooker with 1 quart or 1 1/2 liter of water.
With the beans being unseasoned, close the pressure cooker on high heat until the pressure builds and the safety button pops up. Cook for 20 minutes and let pressure escape. Test to see if the bean is soft. If not check the water to see if it is enough if not then add another cup of water and repeat. Alternatively you can use a slow cooker on high for 4 to 5 hours then you will have a nice soft bean.
Now you can get an immersion blender if you don’t have one handy. I have an oster which is a decent and reasonably priced brand and pure the beans and it ends up being a thick mush. Add 1 red bell pepper, 1 onion or shallot or 4 green onions, 2 cloves of garlic, 1 tomato, 1 habenero or scotch bonnet deseeded and chopped. add this to the vessel which ever method you used to cook the beans. blend with immersion blender and add 1 bullion cube, 3 dashes of maggi or knorr aroma, ether 3 tbs of tomato paste or 1/2 can of coconnut milk.
Add 1 pinch each of grated nutmeg, red chili powder, paprika, crayfish and blend some more. Boil 2 chicken eggs or 4 fresh quail eggs or 1 can of quail eggs that has been rinced and draind. If you are using fresh eggs crack peel and squeaze the eggs with your hand and make sure you take a spoon and scrape the yolks off of your hands. This is called showing your food love and please make sure your hands are clean before cooking.
Wash your hands before you attempt to go in the kitchen because those fingers are germy as hell. Add 3 tbs of red palm oil, and choice of goodies that makes the moin moin truely great such as 1 can of fish of choice. This can be 1 can of crab, oysters, clams, mackeral in either brine or tomato sauce, salmon, tuna in water or oil, mussels, shrimp, and the non canned fish like 3 tbs of fish eggs, 1 can zabiha halal corned beef, 1 can of zabiha halal lunch meat, 1 cup of immitation crab meat or 1 cup of smoked salmon. Fold until this is mixed very well and now it is time to place them in the microwave.
Place these in ramakins and cover them with plastic wrap or wax paper pyrex containers with lids on them and just lay the lids on top of the containers. Place in the microwave to cook for 3 to 5 minutes which depends on how calibrated your microwave is and then let them sit to cool. The moin moin should be great by then.
Enjoy alone, with pap, a bottle of alchohol free malt beverage, noodles, rice dishes, such as jollof rice, jollof quinoa, jollof pasta, and even fonio.
