Actually once I had tried this dish before but it was a dryer curry. Actually I had to come to a happy medium here and make more saucy then it is dry. Actually this is a lot better so I can eat it with rice as you can see. Actually in mortar and pestle add 2 each of green cardamoms, bay leaves, 1 pinch each of black peppercorns, seeds of cumin, coriander, mustard, fenugreek, this gets ground in to a powder and set aside for a minute.
Cut 1 lb or 1 kg of either lamb, goat beef veal or chicken breast in to tiny pieces. Your choice 1 cup of vegtable of choice cut in to tiny pieces as well, This can be frozen or fresh. For vegetarians and vegans you can just do the vegetables instead of the meat. I added 1 cup of julliended baby carrots you can do this as well as dicing the vegetables in to tiny cubes this will work too or go witho peas, corn or simply mixed vegetables.
In a pot on high heat add 1/4 cup of oil of olive, corn, canola, peanut, avocado, grapeseed, sunflower or safflower. Add 1 onion or shallot that has either been cut in to half moon slices or diced in to the oil and fry until brown. Add 1 small piece of ginger washed peeled minced with 3 cloves of garlic and 1 green chili minced. fry these until you smell the aroma and then add contents from mortar and pestle.
Stir and add 1 pinch each of paprika, turmeric, red chili powder, 2 pinches of cilantro, either 1 pinch of pink salt or vegtea seasoning or 1 bullion cube, 3 dashes of maggi or knorr aroma for the unami. Stir a little bit and add 1 tomato chopped. Cook until mushy on low heat. Add the meat and or veg of choice that has been diced rather. Add 1/4 cup of water and cook for 20 minutes. Repeat if the meat is a little tough. You may want to add 1 pinch of meat tenderizer if using meat which is optional.
Adding another 1/4 cup of water and letting it cook for another 20 minutes is ideal. In a mixing bowl add 3 tbs of Desi yogurt, 1/4 cup of water and 1 pinch of cornstarch in to a bowl and mix it up very well and then slowy add it to the pot. Put another 1 oz of water in a bowl and give it a swish and add it to the pot and let it cook for another 10 minutes on low heat.
When it is done serve it with naan or over rice like I did. I ate brown basmati rice instead of the white but white or brown is up to you and I hope you will enjoy it. I found the original version so I posted it besides the other one I did that I ate on top of the rice. Both versions are just as yummy. I feel like a pirate digging up treasure when I see these old photos.
