Guacamole

Hello there, I am sorry I have not blogged in a while. A lot of things was going on with me and it is very personal. I have suffered some heavy losses. One close friend’s mom passed away from stage 4 cancer, another close friend who was the same age as my father passed away and a relitive passed away too all in a very short period of time. the two most recent ones was over a week ago who was the old lady who was my dad’s age and a relative passed away in the same day almost.
For me this is very heartbreaking and my grieving took up a lot of time and energy. I know a couple of old ladies that would not tell me anything wrong and want me to live my life until Allah calls me. For now I have to live my life and continue to be who I am which is absolutely fine with me.
About this recipe I have learned how to make this when I was a teenager. I really love guacamole with especially tortilla chips which can be bought at many grocery stores.
First wash your produce that you are going to use because you do not know who has been handling your stuff before you bought it. Take 3 or 4 avocados that are very ripe and cut in the middle and remove the huge pit. Take a teaspoon and remove the avocado from the peel. When it is very ripe, you can take the teaspoon and easily remove the avocado from the peel easily. When you have done this then mash it up until it is creamy. This is done in a small mixing bowl.
Dice 1 onion or shallot and 1 small roma tomato and add to mashed avocado. To this add 1 capful of lime juice, 1 drop of hotsauce, 1 tbs of mayonnaise, add either 1 pinch of pink salt, adobo, vegtea seasoning or seasoned salt.
Mix very well and and cover the bowl with the lid it came with or some plastic wrap and chill in the fridge for a couple of hours or eat straight away with tortillia chips. This is a must for parties or get togethers. except now for covid19 there is no such thing and if you want to make it for yourself and or your family is ok too. also this recipe can be doubled.
