Fried Hearts
I want to do another heart recipe. I remember when I was in my mid 20s that I would occationaly buy cow hearts and come up with on how to cook it. Obviously I am going to show you how it is done and it is very yummy.
Take 1 heart of either cow, goat or lamb and cut it in half first and remove any congeled blood remaining in the ventricles. Take a sharp knife at the start and then cut the halves of the hearts in to sliceses then cut again so they can be diced. In a cast iron skillet or wok add 1 oz of cooking oil either almond, macadamia nut, flaxseed, grapeseed, olive, vegetable, coconut, sunflower, safflower, or peanut. The other ingredients gets all tossed in there together so do not worry.
Add 1 onion or shallot or 5 green onions diced, 1 tomato either red or green roughly chopped or 5 sundried tomatoes will work too, 2 cloves of garlic and choice of seasonings from this list I am compiling. Add 1 chili of any type. They can be either fresh dried or frozen. I freeze my chillies or you can add simply add 1 pinch of chili powder or add 1 drop of hot sauce. Adding 1 herb of choice is what I did that I added 2 bay leaves because this was my mood.
You can add either 1 pinch of tarragon, chives, dill, chervil, basil, oregano, lovage, savory, parsley, cilantro, thyme, rosemary or even watercress. Add either 1 pinch of kosher salt, mrs dash, pink salt, vegtea seasoning pink salt, sea salt, the infused ones too are great, adobo, bullion or goya seasonador. Also you can even add 1 pinch of peppercorns of any color and grind in mortar and pestle while this is cooking.
Add 3 dashes of maggi or knorr aroma. Either you can add 3 tsp of either lemon or lime juice or add either same amount of apple cider, white, cane or even balsamic vinegar in place of lemon or lime juice. Also you can add 3 dashes of worchestershire sauce too in place of maggi or knorr aroma if you wish or a tiny dab of marmite.
Add 1/4 cup of water and reduce to a simmer. Cover and let cook for 10 minutes. Please remember you add only one herb choice in this dish. I really hope you will enjoy this dish a lot and it is done under an hour. So it is very quick to make almost like liver and kidneys but the prep time is much faster then the other two and this recipe is only for the hearts only. I do not want to confuse anyone.
